Granny E's cheesecake recipe

Ingredients

  • 1 x 250ml cream

  • 3 x 250g medium/full fat cream cheese

  • 5ml vanilla essence

  • 3 large eggs

  • 175g sugar (white or brown)

  • 50g cake flour

  • 1 packet tennis biscuits

  • 60g butter

Directions

  • Part 1
  • Crush biscuits to make a crumble and melt butter in microwave for 1 minute.
  • Mix the two in a mixing bowl until you have an even consistency.
  • Spoon the crumble into a baking dish.
  • Part 2
  • Sift cake flour and add sugar. Mix.
  • Add eggs, vanilla, cream cheese, cream and blend together until you get a smooth and silky texture.
  • Part 3
  • Pour the mixture over the base.
  • Part 4
  • Bake in the oven at 180°C for 25-30 minutes, until lightly golden.
  • Switch off the oven and allow to cool inside the oven. Do not remove until the oven has cooled!

Grannys Top Tip

  • Let the cream cheese reach room temperature before you begin, as it’s easier to manage and blend.
